Instructions
Chop Tofu into small cubes
Cook Tofu for 10 mins in air fryer
Add red curry paste, coconut milk, fish sauce, brown sugar and 0.5 cups of water to a saucepan on low heat allow to simmer for 5 minutes
Add rice with 1.5 cups of water into a separate saucepan on medium heat cook for ten minutes with lid on
Add the fried tofu to red curry sauce and continue to simmer for 10 minutes
Turn off the heat for the rice and allow to sit with lid on for at least 10 minutes
Plate nicely and eat!
