Red Curry with Tofu

Equipment

  • 2 Saucepans
  • 1 Air Fryer or frying pan
  • 1 Stirring Spoon heat proof
  • 1 Measuring Jug

Ingredients
  

  • 1 tbsp Red Curry Paste Ayam Brand
  • 1 cup Jasmin Rice
  • 500 g Tofu Macro Firm
  • 1 tbsp Fish Sauce Ayam Brand
  • 270 ml Coconut milk Ayam Brand
  • 0.5 tbsp Brown Sugar

Instructions
 

  • Chop Tofu into small cubes
  • Cook Tofu for 10 mins in air fryer
  • Add red curry paste, coconut milk, fish sauce, brown sugar and 0.5 cups of water to a saucepan on low heat allow to simmer for 5 minutes
  • Add rice with 1.5 cups of water into a separate saucepan on medium heat cook for ten minutes with lid on
  • Add the fried tofu to red curry sauce and continue to simmer for 10 minutes
  • Turn off the heat for the rice and allow to sit with lid on for at least 10 minutes
  • Plate nicely and eat!
