add the curry paste into the cast iron pan
warm the curry paste on low heat for 2 minutes
add the chicken into the cast iron pan pan
stir to coat the chicken in paste
cook for 10 minutes
pour the can of coconut milk into the pan
leave the pan to simmer while you cook the rice
add the rice, butter and 1.5 cups of water into the other saucepan
bring the rice to a boil with the lid on
cook the rice for another 5 minutes
turn off the heat for the rice and allow it to sit 10 minutes
plate nicely and enjoy!
