
Chicken Curry
A simple chicken korma with rice (this goes great with peas, rice and roti!)
Equipment
- 1 Cast Iron Pot The big blue one
- 1 Saucepan
- 1 Measuring Jug
- 1 Stirring Spoon
Ingredients
- 0.,5 cups Korma Curry Paste Patakas brand
- 1 can coconut milk Ayam brand
- 1 kg Chicken breast tenderloins
- 1 cup basmati rice
- small nob butter
Instructions
- add the curry paste into the cast iron pan
- warm the curry paste on low heat for 2 minutes
- add the chicken into the cast iron pan pan
- stir to coat the chicken in paste
- cook for 10 minutes
- pour the can of coconut milk into the pan
- leave the pan to simmer while you cook the rice
- add the rice, butter and 1.5 cups of water into the other saucepan
- bring the rice to a boil with the lid on
- cook the rice for another 5 minutes
- turn off the heat for the rice and allow it to sit 10 minutes
- plate nicely and enjoy!
